Partridge With Chocolate

This is a very characteristic dish of Navarre. It is delicious and easy to prepare. Follow these simple steps:

1- Take the 4 partridges, clean them, and tie them with kitchen thread. Salt the partridge well (on the inside too). Fry the partridges over low heat in a clay pot with plenty of oil. Take them out when they get a gold color.

2-  Fry the garlic in the first fat. Add the wine, the bay leaf, vinegar, pepper, cloves and some broth. Cook everything together for 5 minutes. When that’s done, add the partridges and cook them again until you notice that they are tender.

3- Remove the partridges, Remove the kitchen thread and put everything in another clay pot. Pass the sauce and pour it over the partridges. Also, add some chocolate undone. Cook over low heat for 15 more minutes.

4- When there are 5 minutes to finish the cooking, add some peeled grapes. Serve the dish in the same casserole, with a slice of fried bread on top of each accompaniment partridge.

Ingredients for 4 people:

– 4 partridges

– 3 garlic cloves

– 2 dl of olive oil

– 200 grams of grapes

– 30 grams of chocolate in pill

– 2 spice cloves

– 4 small slices of fried bread

– Salt

– One quart of red or white wine

– 1/8 of a liter of vinegar

– 6 grains of pepper

– 1 bay leaf

– One quart of broth
